Prepare the berries some more! Place the strawberries in a small saucepan. Using a potato masher or fork begin to mash the fruits into a chunky texture.
Combine berries, sweetener, lemon and seamoss Add agavé and lemon. Bring the mixture to a boil, stirring frequently for about 15 - 20 minutes. When the fruit begins to look jammy, lower the heat and add seamoss Be sure to keep an eye on the mixture!
Add to the jar Turn off the heat and carefully transfer the jam into a clean (10-ounce) glass jars. Cool to room temperature. Seal, label with the fruit and the date, and store it in the refrigerator for up to 3 weeks.
RECIPE NOTES:
Adding seamoss gives the jam a lovely texture as well as adds even more nutrients to this sweet treat. Since seamoss is a thickener it also lessens the boiling time.
